Loaded Protein Scramble (30g+ Protein)

I make this scramble on busy mornings when I want something hearty that keeps me full until lunch. Fluffy eggs, savory turkey sausage, and creamy cottage cheese give you over 30 grams of protein in about 10 minutes.
Prep Time 5 minutes
Cook Time 8 minutes
Servings: 1
Course: Breakfast
Cuisine: American

Ingredients

  • 3 large eggs
  • 2 oz lean turkey sausage crumbled
  • 1/4 cup cottage cheese
  • 1 handful fresh spinach chopped
  • 2 tbsp mushrooms sliced
  • 1 tsp olive oil
  • 2 tbsp shredded cheddar cheese optional
  • 1/4 tsp black pepper
  • Pinch of salt

Method

  1. Heat the olive oil in a non-stick pan over medium heat. Add the turkey sausage and cook for 3 minutes, breaking it up, until browned.
  2. Add the mushrooms and cook for 1–2 minutes until soft. Stir in the spinach and let it wilt for 30 seconds.
  3. In a small bowl, whisk the eggs with the cottage cheese, salt, and pepper until well combined.
  4. Lower the heat and pour the egg mixture over the sausage and veggies.
  5. Gently fold with a spatula for 2–3 minutes, until the eggs are just set but still soft and creamy.
  6. Sprinkle with cheddar if using, then serve right away, on its own or with a slice of whole-wheat toast.

Notes

  • Protein: About 30 g without the cheddar, and around 36 g with it. Check your sausage label, since protein varies by brand.
  • Creamy eggs: Keep the heat on low once the eggs go in. High heat makes them dry and rubbery.
  • Smoother texture: Blend the cottage cheese with the eggs if you don't like the curds.
  • Meal prep: Cook the sausage and veggies ahead of time, so you only need to scramble the eggs in the morning.
  • Vegetarian swap: Replace the sausage with 1/2 cup black beans or crumbled firm tofu.
  • Storage: Best eaten fresh. Leftovers keep in the fridge for 1 day and reheat gently in the microwave.
