Ingredients

  • 4 large eggs
  • 1 cup fresh spinach roughly chopped
  • 1/2 cup mushrooms sliced
  • 1/4 cup onion finely chopped
  • 1/4 cup bell pepper finely chopped
  • 2 slices whole-wheat bread
  • 1 ripe avocado halved and sliced
  • 1 tablespoon olive oil or butter
  • Salt and black pepper to taste

Method

  1. Heat olive oil in a nonstick skillet over medium heat. Add onion and bell pepper; sauté 2–3 minutes until softened.
  2. Add mushrooms; cook 2 minutes more until tender. Stir in spinach and cook until just wilted.
  3. In a bowl, whisk eggs with a pinch of salt and pepper. Pour into the skillet over the veggies.
  4. Gently scramble with a spatula, pushing from edges to center, until eggs are softly set and slightly creamy (do not overcook).
  5. Meanwhile, toast the whole-wheat bread. Top each slice with avocado slices; season lightly with salt and pepper.
  6. Divide scrambled eggs between two plates and serve alongside avocado toast. Add optional cheese if using.

  8. Recipe Notes:
  9. Swap veggies based on what you have (zucchini, tomatoes, kale).
  10. For extra protein, add 1–2 egg whites or a side of Greek yogurt.
  11. Make-ahead tip: Pre-chop veggies the night before to cut morning prep time.
  12. Storage: Best eaten fresh; leftovers keep 1 day refrigerated and reheat gently on low heat.
