Ingredients

  • 2 medium sweet potatoes peeled and diced into 1-inch cubes
  • 4 tsp olive oil divided
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • ¼ tsp black pepper
  • 1 cup uncooked quinoa
  • 2 cups water
  • 1 15 oz can chickpeas, drained and rinsed
  • ¼ cup tahini
  • 2 Tbsp lemon juice
  • 2 Tbsp water for dressing
  • 1 tsp honey
  • ¼ tsp salt
  • 4 cups baby spinach
  • 1 cup shredded carrots
  • ¼ cup toasted unsalted pepitas pumpkin seeds

Method

  1. Preheat oven to 400°F (200°C) and line a large baking sheet with parchment paper.
  2. Toss sweet potatoes with 2 tsp olive oil, garlic powder, smoked paprika, and black pepper; spread in an even layer.
  3. Roast sweet potatoes 25–30 minutes, stirring halfway, until tender and lightly caramelized.
  4. While potatoes roast, cook quinoa: combine quinoa and 2 cups water in a saucepan, bring to a boil, reduce to low, cover, and simmer 15 minutes; rest 5 minutes, then fluff.
  5. Make the dressing: whisk tahini, lemon juice, 2 Tbsp water, honey, and salt until smooth; add more water if needed to reach a pourable consistency.
  6. Assemble 4 meal-prep containers: divide quinoa, roasted sweet potatoes, chickpeas, spinach, and carrots among them.
  7. Drizzle with lemon-tahini dressing and top with toasted pepitas; seal and refrigerate up to 4–5 days.
