Ingredients

  • 3 large ripe but firm peaches
  • 1 tablespoon unsalted butter melted
  • ½ cup mascarpone cheese softened
  • 2 tablespoons honey divided
  • ¼ teaspoon ground cinnamon
  • ½ teaspoon vanilla extract
  • 1 small pinch fine salt

Method

  1. Preheat a clean grill to medium heat. Mix mascarpone, 1 tablespoon honey, vanilla, cinnamon, and salt in a small bowl until smooth.
  2. Wash and dry peaches. Halve and pit them, then brush the cut sides lightly with melted butter.
  3. Grill peaches cut-side down for about 4 minutes, until marked. Turn and grill for another 3–4 minutes, until warm and tender but still holding their shape.
  4. Transfer the peaches to a platter. Spoon the mascarpone mixture over the peaches or serve it on the side. Drizzle with the remaining honey and serve warm.

Notes

Grill time varies with peach ripeness and grill heat. Use firm nectarines as a substitute, or thick plain Greek yogurt instead of mascarpone. Refrigerate leftover topping in a covered container and use within 3 days; grilled peaches are best served shortly after cooking.
