Ingredients

  • 1 lb 450 g boneless, skinless chicken breasts – Provides hearty protein for a satisfying salad.
  • 2 tablespoons olive oil divided – Used for cooking the chicken and preparing the dressing.
  • ¾ teaspoon fine salt divided – Seasons the chicken and enhances the overall flavor.
  • ¼ teaspoon black pepper – Adds a mild savory kick.
  • 6 cups chopped romaine lettuce – Creates a crisp refreshing salad base.
  • 1½ cups corn kernels – Adds natural sweetness and a summery flavor.
  • 1 cup cherry tomatoes halved – Brings juicy freshness and vibrant color.
  • 1 cup diced English cucumber – Adds coolness and a satisfying crunch.
  • 1 medium ripe avocado diced – Gives the salad a creamy texture.
  • ¼ cup thinly sliced red onion – Adds a sharp slightly sweet flavor.
  • 2 tablespoons lime juice – Provides a bright tangy base for the dressing.
  • 1 teaspoon honey – Balances the lime juice with a touch of sweetness.
  • 2 tablespoons chopped fresh cilantro – Finishes the salad with a fresh herbal flavor.

Method

  1. Season the chicken. Pat the chicken dry. Rub it with 1 tablespoon of olive oil, ½ teaspoon of salt, and the black pepper.
  2. Cook the chicken. Heat a grill or grill pan over medium heat. Cook the chicken for about 5 minutes per side, or until the center reaches 165°F (74°C). Transfer it to a plate and let it rest for 5 minutes before slicing.
  3. Make the dressing. In a small bowl, whisk together the remaining 1 tablespoon of olive oil, lime juice, honey, and remaining ¼ teaspoon of salt.
  4. Prepare the salad base. Add the romaine, corn, tomatoes, cucumber, and red onion to a large serving bowl. Pour over about half the dressing and toss gently.
  5. Finish and serve. Arrange the sliced chicken and diced avocado over the salad. Drizzle with the remaining dressing, scatter the cilantro on top, and serve right away.
  6. For a meal-prep-friendly salad, keep the dressing, chicken, and chopped vegetables separate until serving. Add the avocado just before eating to help it stay fresh. To save time, use leftover grilled chicken or ready-cooked corn.
