Ingredients

  • 1 ripe avocado
  • 2 slices whole-grain bread
  • 1 large egg
  • 1 tsp fresh lemon juice
  • 1/4 tsp salt or to taste
  • 1/8 tsp black pepper
  • 1/4 tsp chili flakes or to taste
  • 4 cherry tomatoes halved (optional)
  • 1 tsp olive oil or butter for the pan

Method

  1. Toast the bread until it is golden and crisp.
  2. Mash the avocado in a bowl with a fork. Add the lemon juice, salt, and pepper, and mix until creamy but still slightly chunky.
  3. Heat a non-stick pan over medium heat with the olive oil or butter. Fry the egg for 3 to 4 minutes, or poach it if you prefer.
  4. Spread the avocado thickly over both slices of toast.
  5. Top with the egg, cherry tomatoes, and chili flakes.
  6. Serve right away while the toast is still crunchy.

Notes

  • Choose an avocado that is firm but gives slightly when pressed. Unripe ones turn bitter and won't mash smoothly.
  • Don't skip the lemon juice. It adds a fresh taste and keeps the avocado from browning.
  • For a runny yolk, cook the egg on lower heat and pull it off as soon as the white sets.
  • Pair with Greek yogurt or fruit for a more filling meal.
  • Eat fresh. The toast loses its crunch if it sits for more than a few minutes.
