Ingredients

  • For the soaked fruit
  • 150 g / 1 cup raisins
  • 150 g / 1 cup sultanas
  • 100 g / ⅔ cup currants
  • 100 g / ⅔ cup dried cranberries
  • 100 g / ⅔ cup chopped dried apricots
  • 100 g / ⅔ cup glacé cherries halved
  • 50 g / ⅓ cup mixed candied peel
  • 120 ml / ½ cup brandy or apple juice for alcohol-free
  • 60 ml / ¼ cup fresh orange juice
  • Zest of 1 orange
  • For the cake
  • 225 g / 1 cup unsalted butter softened
  • 200 g / 1 cup packed dark brown sugar
  • 2 tablespoons black treacle or molasses
  • 1 teaspoon vanilla extract
  • 4 large eggs room temperature
  • 250 g / 2 cups all-purpose flour
  • 75 g / ¾ cup ground almonds
  • 1½ teaspoons baking powder
  • ½ teaspoon salt
  • 1½ teaspoons ground cinnamon
  • 1 teaspoon mixed spice
  • ½ teaspoon ground ginger
  • ¼ teaspoon ground nutmeg
  • For finishing
  • 2 tablespoons brandy orange juice, or apple juice, for feeding
  • 500 g / about 1 lb marzipan optional
  • 2 tablespoons apricot jam optional
  • 500 g / about 4 cups powdered sugar optional
  • 2 egg whites or 4 tablespoons aquafaba optional
  • 1 teaspoon lemon juice optional

Method

  1. The night before baking, place the raisins, sultanas, currants, cranberries, apricots, cherries, and mixed peel in a large bowl. Add the brandy, orange juice, and orange zest. Stir well, cover, and leave to soak overnight.
  2. Heat the oven to 150°C / 300°F. Grease a deep 20 cm / 8-inch round cake tin and line it with two layers of baking parchment, allowing the paper to extend above the rim.
  3. Beat the softened butter and dark brown sugar together for 4 to 5 minutes, until light and fluffy. Beat in the black treacle and vanilla extract.
  4. Add the eggs one at a time, beating well after each addition. If the mixture looks curdled, add 1 tablespoon of the flour and continue beating.
  5. In a separate bowl, whisk together the flour, ground almonds, baking powder, salt, cinnamon, mixed spice, ginger, and nutmeg.
  6. Fold the dry ingredients into the butter mixture until almost combined. Add the soaked fruit and any remaining soaking liquid, then fold gently until evenly distributed.
  7. Spoon the thick batter into the prepared tin and smooth the surface. Wrap the outside of the tin with brown paper or several layers of newspaper if desired.
  8. Bake for 2 hours at 150°C / 300°F. Reduce the oven to 140°C / 275°F and bake for a further 45 minutes, until a skewer inserted in the center comes out clean.
  9. Cool the cake completely in the tin. If feeding it, poke small holes over the top with a skewer and brush with 2 tablespoons brandy, orange juice, or apple juice.
  10. Wrap the cooled cake in parchment and foil, then store in an airtight container. Decorate with marzipan and royal icing once fully cool, if desired.

Notes

  • Alcohol-free option: Use apple juice or orange juice instead of brandy in both the fruit soak and feeding step.
  • Nut-free option: Replace the ground almonds with an additional 75 g / ¾ cup all-purpose flour.
  • Fruit variations: Dried figs, dates, prunes, or chopped dried pears can replace up to 100 g of the dried fruit.
  • Storage: Undecorated cake keeps for up to 3 weeks in a cool, dark place. Once cut, wrap slices tightly and eat within 5 to 7 days.
  • Make ahead: Bake the cake 1 to 3 weeks before Christmas for the deepest flavor.
  • Serving suggestion: Enjoy with tea, coffee, custard, vanilla ice cream, or a small slice of sharp Cheddar.
